Go Spicy for March!
If February has not already got you in the mood for some heat in the sun – as well as in your food – then let us hope March will do so! These Spring months are always changeable weather-wise, and spicy food can be used to cool us down or heat us up. This month therefore we are going to Go Spicy, whatever the weather.
This month, we are going to make – Spicy Chicken with Broad Leaf Thyme. Thymes come in many flavours and Broad Leaf Thyme is the spiciest of the spiciest! Just use a little to start with until you decide how spicy you like it.
What do you need? – for 4 people:
2 chicken fillets (skinless); about 3 tablespoons of oil of your choice; 4 tomatoes for garnish; about 6 large-ish mushrooms, half an onion, and about a tablespoon of finely chopped Broad Leaf Thyme.
How do you make it?
Sweat the onions (keep them moving, do not burn them) in the oil. THINLY slice the chicken (you are going to fry this dish quickly and the chicken needs to be cooked through) and then add that to the pan with the onions. Make sure the chicken is cooked through, then add your mushrooms, thinly sliced or chopped small. Cook those for a while (keep it all stirred and moving). Then add your chopped Thyme. Turn the heat down and let it slowly all blend together as it cooks – stir it occasionally to stop it catching. You could add a little more oil or even water if catches in the pan at this stage.
Serve it wrapped in a large lettuce leaf, on rice, on top of veggies – whatever suits you.
